The Pinsa
Pinsa Romana is a variant of pizza that is made with a mix of flours, lots of water up to 85%
and a long rising time of 72 hours . This makes the dough more airy and very easily digestible. The dough becomes
of handmade to authentic Italian recipe that was already used in the ancient Roman Empire. The ingredients are
mostly remained the same, but adapted to this time. While retaining the original, rich nutritional values.
The Pinsa base is made with a mix of high-quality flours such as wheat,
rice and soy flour. Salt, olive oil, mother yeast and water are added. It rising
is divided into two phases of 72 hours. Then the dough is kneaded by hand until
it has the right texture. Finally, the bottom is half baked in the oven.
